Today I decided to create an extreme falafel bowl for dinner, inspired by the Green Dinner Table. It's a restaurant-quality dish that's sure to impress anyone who tries it. Here's how you can make it yourself:

Recipe

Ingredients (Serves 4)

  • 1 can chickpeas, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped parsley
  • 1/4 cup chopped onion
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/4 teaspoon black pepper
  • 2 tablespoons flour
  • 1 tablespoon vegetable oil
  • 4 cups cooked brown rice
  • 4 cups mixed greens
  • 2 cups chopped tomatoes
  • 2 cups chopped cucumber
  • 1 avocado, sliced
  • 1/4 cup hummus

Instructions

  1. Preheat your oven to 375°F.
  2. In a food processor, combine the chickpeas, breadcrumbs, parsley, onion, garlic, salt, cumin, coriander, and black pepper. Pulse until the mixture comes together and is well combined.
  3. Form the mixture into small balls (about 2 tablespoons of mixture per ball) and flatten them slightly into patties. Coat each patty in flour.
  4. Heat up a large skillet over medium-high heat and add the vegetable oil. Working in batches, cook each patty for 4-5 minutes until they're golden on each side. Remove them from the skillet and place them on a baking sheet lined with parchment paper.
  5. Bake the patties for 10-12 minutes. Flip them halfway through to ensure they cook evenly.
  6. While the falafels are baking, begin to assemble the bowls. Divide the cooked brown rice among four bowls. Top each bowl with mixed greens, chopped tomatoes, cucumber, and sliced avocado.
  7. Once the falafels are done baking, add them to the bowls, along with a dollop of hummus on top.
