Ingredients:
- 2 lbs. beef chuck or stew meat, cut into 1-inch cubes
- 2 Tbsp. olive oil
- 3 cloves garlic, minced

- 4 stalks celery, sliced
- 3 Tbsp. tomato paste
- 1 cup red wine
- 4 cups beef stock
- 2 bay leaves
- 1 tsp. dried thyme
- Salt and pepper, to taste
Instructions:
- Heat olive oil in a large pot over medium-high heat.
- Add beef and brown on all sides, about 5-7 minutes.
- Remove beef from pot and set aside.
- Add garlic, onions, carrots, and celery to the pot and sauté until softened, about 8-10 minutes.
- Add tomato paste and cook for 1-2 minutes.
- Pour in red wine and stir, scraping up any browned bits from the bottom of the pot.
- Add beef stock, bay leaves, thyme, salt, and pepper.
- Bring to a boil, then turn down heat and let simmer for 2-3 hours, until the meat is tender.
- Serve with crusty bread or over mashed potatoes.
