  • 1 bunch fresh parsley

  1. Preheat your oven to 350°F/180°C/gas 4.
  2. Remove the neck and giblets from the turkey's cavity and set aside.
  3. Zest the lemon and chop the parsley leaves, then mix them with the softened butter and season with salt and pepper to create the butter mixture.
  4. Peel the garlic cloves and slice them in half horizontally.
  5. Lift the turkey's skin away from the breast and spread the butter mixture all over the meat, including under the skin.

  7. Tie the legs together with kitchen string and tuck the wing tips under the body.
  8. Drizzle the turkey with olive oil and cover it loosely with foil.
