Vegan Mexican Quinoa

Vegan Mexican Quinoa

Ingredients:

  • 1 cup quinoa
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, chopped
  • 1 avocado, diced
  • 1 lime, juiced
  • 2 cloves garlic, minced
  • 1/4 cup cilantro, chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper, to taste

Instructions:

  1. Cook quinoa according to package instructions.
  2. In a large skillet, sauté garlic and red bell pepper until tender.
  3. Add black beans, cumin, chili powder, salt and pepper to the skillet and stir until heated through.
  4. Add cooked quinoa to the skillet and stir to combine.
  5. Remove from heat and squeeze lime juice over the top.
  6. Garnish with avocado and cilantro.
  7. Serve and enjoy!

Mexican Stuffed Sweet Potatoes

Mexican Stuffed Sweet Potatoes

Ingredients:

  • 4 sweet potatoes
  • 1 can black beans, drained and rinsed
  • 1 tomato, chopped
  • 1/2 onion, chopped
  • 1 jalapeño, chopped
  • 1 avocado, diced
  • 1 lime, juiced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/4 cup cilantro, chopped
  • Salt and pepper, to taste

Instructions:

  1. Preheat oven to 400°F.
  2. Pierce sweet potatoes all over with a fork and place on a lined baking sheet. Bake for 45 minutes or until tender.
  3. In a large skillet, sauté garlic, onion, and jalapeño until tender.
  4. Add black beans, tomato, cumin, chili powder, salt and pepper to the skillet and stir until heated through.
  5. Cut a slit down the middle of each sweet potato and stuff with the skillet mixture.
  6. Top with avocado, cilantro and a squeeze of lime juice.
  7. Serve and enjoy!

Enchilada Casserole

Ingredients:

  • 12 corn tortillas
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, chopped
  • 1 jalapeño, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups enchilada sauce
  • 2 cups shredded cheese
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. Preheat oven to 350°F.
  2. In a large skillet, sauté garlic, onion, red bell pepper and jalapeño until tender.
  3. Add black beans, salt and pepper to the skillet and stir until heated through.
  4. Spread 1/2 cup of enchilada sauce in the bottom of a 9x13 inch baking dish.
  5. Layer 6 tortillas on top of the sauce.
  6. Spread half of the skillet mixture on top of the tortillas.
  7. Sprinkle 1 cup of shredded cheese on top of the mixture.
  8. Repeat layers of tortillas, skillet mixture, sauce and cheese.
  9. Bake for 30 minutes or until cheese is melted and bubbly.
  10. Garnish with cilantro and serve.
