Ingredients:

  • 2 red onions
  • 1 red pepper
  • 1 yellow pepper
  • 2 cloves of garlic
  • 2 medium tomatoes
  • Saffron
  • 1.5 cups of short grain brown rice
  • 3 cups of vegetable broth
  • 100g of artichoke hearts
  • 1/2 can of chickpeas
  • 1 lemon
  • Parsley

Instructions:

  1. Preheat the oven to 375°F.
  2. Finely chop the onions, peppers, garlic and tomatoes and place in a large, oven-proof dish.
  3. Add a pinch of saffron and 1.5 cups of short grain brown rice to the dish.
  4. Pour 3 cups of vegetable broth over the veggies and rice.
  5. Add 100g of artichoke hearts and 1/2 can of chickpeas to the mix.
  6. Cover the dish with a lid or foil and bake for 45-50 minutes, or until the rice is cooked through.
  7. Squeeze the juice of 1 lemon over the paella and sprinkle with chopped parsley.
  8. Serve hot and enjoy!

Vegetarian Chili

Ingredients:

  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 chili peppers, chopped
  • 1 large sweet potato, diced
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 1 can of chickpeas
  • 1 can of kidney beans
  • 1 can of black beans
  • 1 can of chopped tomatoes
  • 2 cups of vegetable broth
  • 1 tablespoon of cumin
  • 1 tablespoon of smoked paprika
  • Salt and pepper to taste
  • Olive oil
  • Avocado, diced
  • Cilantro, chopped
  • Sour cream (optional)

Instructions:

  1. Preheat the oven to 375°F.
  2. Heat a large pot over medium heat and add a splash of olive oil.
  3. Add the chopped onion, garlic and chili peppers to the pot and sauté for 5-7 minutes, until the onion is translucent.
  4. Add the diced sweet potato and peppers to the pot and sauté for another 5 minutes.
  5. Add the canned beans, canned tomatoes and vegetable broth to the pot and stir well.
  6. Season with cumin, smoked paprika, salt and pepper to taste.
  7. Cover the pot with a lid and bake in the oven for 45-50 minutes, or until the sweet potato is tender.
  8. Garnish with diced avocado, chopped cilantro and a dollop of sour cream (if using).
  9. Serve hot and enjoy!

Vegetarian Shepherd's Pie

Vegetarian Shepherd's Pie

Ingredients:

  • 2lbs of white potatoes
  • 2 tablespoons of butter
  • 1/4 cup of milk
  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 carrot, diced
  • 1 zucchini, diced
  • 1 cup of mushrooms, sliced
  • 1 can of lentils, drained and rinsed
  • 1 can of chopped tomatoes
  • 1 tablespoon of tomato paste
  • 1 cup of vegetable broth
  • 1 tablespoon of cornstarch
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F.
  2. Peel and dice the potatoes and boil them in a pot of salted water until tender.
  3. Drain the potatoes and mash them with butter and milk to create a smooth mashed potato consistency.
  4. In a separate pan, heat olive oil over medium heat and add the chopped onion, garlic, carrot, zucchini and mushrooms.
  5. Sauté the veggies for 5-7 minutes or until they are soft.
  6. Add the lentils, chopped tomatoes, tomato paste and vegetable broth to the pan and stir well.
  7. Simmer the mixture for 10-15 minutes to allow the flavors to blend.
  8. Add a tablespoon of cornstarch to the mixture and stir well to thicken the sauce.
  9. Season the mixture with salt and pepper to taste.
  10. Pour the veggie mixture into a large, oven-proof dish and spread the mashed potatoes evenly over the top.
  11. Bake in the oven for 30-40 minutes or until the top is nicely browned.
  12. Serve hot and enjoy!
